For the Savory Beef Topping:
- 1 lb ground beef
- 1 small onion, chopped
- 1/2 teaspoon dried oregano
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- Salt and freshly ground black pepper, to taste
- 1/2 cup shredded cheddar cheese (or cheese of your choice)
- Fresh parsley or chives, for garnish (optional)
Instructions
Prepare the Potato Pancakes:
- Squeeze excess moisture from grated potatoes.
- Mix potatoes with onion, egg, flour, baking powder, garlic powder, salt, and pepper.
Fry the Potato Pancakes:
- Heat olive oil in a skillet.
- Scoop and flatten the mixture into pancakes, frying for 3-4 minutes per side until golden brown.
Prepare the Beef Topping:
- Cook ground beef and onion in a skillet until browned.
- Drain excess fat, then season with oregano, paprika, garlic powder, salt, and pepper.
Assemble & Serve:
- Place beef on top of pancakes.
- Sprinkle cheese and let it melt.
- Garnish with parsley or chives and serve warm.
Notes
- For extra crispiness, remove as much moisture from the potatoes as possible before frying.
