Crust
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup melted butter
Filling
- 4 cups Philadelphia cream cheese, room temperature
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 cup sour cream
Instructions
- Prepare the Crust: Preheat your oven to 325°F (163°C). In a bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan and set aside.
- Make the Filling: In a large bowl, use a mixer to blend the cream cheese, 1 cup sugar, and vanilla extract until smooth. Add eggs one at a time, mixing well after each addition. Stir in sour cream.
- Assemble: Pour the filling over the crust in the springform pan.
- Bake: Wrap the outside of the pan with aluminum foil and place it in a water bath. Bake for 60 minutes or until the edges are set but the center is slightly jiggly.
- Cool and Serve: Remove from the oven and cool to room temperature. Refrigerate for at least 4 hours before serving.
