- 1 lb roll sausage
- 7 large eggs
- 1/2 can of Rotel (diced tomatoes and green chilies)
- Shredded cheese (to taste)
- Tortillas
- Optional: Hashbrowns, sausage gravy
Instructions
- Cook the Sausage: In a skillet over medium heat, cook the sausage until browned and fully cooked, breaking it into crumbles. Drain any excess grease.
- Scramble the Eggs: In a bowl, whisk the eggs until well beaten.
- Prepare the Eggs with Rotel: In a separate skillet, heat the Rotel briefly, then add the beaten eggs. Cook and scramble the eggs with the Rotel until fully cooked.
- Assemble the Burritos: Lay out tortillas on a flat surface. Spoon a portion of the cooked sausage onto each tortilla, followed by a portion of the scrambled egg and Rotel mixture. Sprinkle shredded cheese over the eggs.
- Optional Additions: Add hashbrowns or sausage gravy to each burrito if desired.
- Roll Up the Burritos: Fold in the sides of each tortilla and roll up tightly.
- Serve or Freeze: Serve immediately or freeze for later use. To freeze, wrap each burrito individually in plastic wrap or aluminum foil and store in a freezer-safe container.
To Reheat (if frozen):
- Unwrap the burrito and microwave for 1-2 minutes, or until heated through. For extra crispiness, air fry for a few minutes after microwaving.
