Instructions

  1. Cook the Sausage: In a skillet over medium heat, cook the sausage until browned and fully cooked, breaking it into crumbles. Drain any excess grease.
  2. Scramble the Eggs: In a bowl, whisk the eggs until well beaten.
  3. Prepare the Eggs with Rotel: In a separate skillet, heat the Rotel briefly, then add the beaten eggs. Cook and scramble the eggs with the Rotel until fully cooked.
  4. Assemble the Burritos: Lay out tortillas on a flat surface. Spoon a portion of the cooked sausage onto each tortilla, followed by a portion of the scrambled egg and Rotel mixture. Sprinkle shredded cheese over the eggs.
  5. Optional Additions: Add hashbrowns or sausage gravy to each burrito if desired.
  6. Roll Up the Burritos: Fold in the sides of each tortilla and roll up tightly.
  7. Serve or Freeze: Serve immediately or freeze for later use. To freeze, wrap each burrito individually in plastic wrap or aluminum foil and store in a freezer-safe container.
