Chicken Pasta:
- 1 1/2 pounds boneless skinless chicken, cut into 1-inch pieces
- 10 ounces penne pasta
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 tablespoon olive oil
Sauce:
- 3 tablespoons butter
- 2 teaspoons minced garlic
- 3 tablespoons flour
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup grated parmesan cheese
- 1 cup sun-dried tomatoes, drained
- 1 teaspoon paprika
- 2 teaspoons dried Italian seasoning
- Fresh basil for garnish
Instructions
- Prepare Pasta: Cook penne pasta as per package instructions. Drain and set aside.
- Season Chicken: Cut chicken into 1-inch pieces. Season with salt and pepper.
- Cook Chicken: In a large skillet, heat olive oil over medium-high heat. Add chicken and cook for 6-8 minutes until fully cooked. Transfer to a plate.
- Make Sauce: In the same skillet, melt butter. Sauté garlic for 30 seconds. Stir in flour to form a paste. Gradually whisk in chicken broth, heavy cream, and parmesan cheese. Add sun-dried tomatoes, paprika, and Italian seasoning. Simmer until thickened.
- Combine: Return chicken to skillet. Add cooked pasta. Stir to coat evenly with sauce.
- Garnish: Top with chopped basil and extra parmesan cheese.
