- 2 cups elbow macaroni
- 1/4 cup unsalted butter
- 1/4 cup all-purpose flour
- 2 cups whole milk
- 1/2 cup heavy cream
- 1 cup sharp cheddar cheese, shredded
- 1/2 cup white cheddar cheese, shredded
- 1/4 cup parmesan cheese, grated
- 1/4 cup romano cheese, grated
- 1/2 cup American cheese, cubed (optional)
- Salt and pepper to taste
- Extra shredded cheddar cheese for topping
Instructions
- Preheat your oven to 350°F (175°C).
- Cook the elbow macaroni in a large pot of boiling salted water until al dente, about 8-10 minutes. Drain and set aside.
- In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1-2 minutes until it forms a light golden paste.
- Gradually whisk in milk and cream, avoiding lumps. Cook until the mixture starts to thicken.
- Lower the heat and add in sharp cheddar, white cheddar, parmesan, romano, and American cheese (if using). Stir until the cheeses are melted and the sauce is smooth.
- Season with salt and pepper to taste.
- Combine the cooked macaroni with the cheese sauce, ensuring even coverage.
- Transfer the mixture to a casserole dish. Sprinkle extra shredded cheddar cheese on top.
- Bake in the preheated oven for 20 minutes, or until the cheese is bubbly and golden brown.
- Let it cool for a few minutes before serving.
Notes
- For a lighter version, you can use low-fat milk and cheeses.
- Feel free to add breadcrumbs on top for extra crunch.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
